Cheesy, Bacon Wrapped Chicken with Hash Browns

Ingredients

Bacon Wrapped Chicken

  • 1 Bag Boneless Chicken Breast
  • 1-2 Bags Sliced Bacon
  • 1 Block Cheddar Cheese
  • Fresh Cut Spinach
  • 1/4″ Cube of Butter
  • 1/2 Teaspoon Chili Powder
  • 1/2 Teaspoon Thyme
  • 1/2 Teaspoon Garlic
  • 1/8 Teaspoon Salt

Hash Browns

  • 5 Small Red Potatoes
  • 1 Sweet Potato
  • 1 Yellow Onion
  • 1 Green Onion
  • 1/2″ Cube of Butter
  • 1 Teaspoon Garlic
  • 1/2 Teaspoon Black Pepper
  • 1/8 Teaspoon Salt

Utensils

  • Heat Deflector
  • Grilling Gloves – You will be putting the heat deflector into the grill after getting the grill hot!
  • Cast Iron Frying Pan
  • Cookie Sheet

Instructions

  • Light your Saffire and allow it to reach an internal temperature of ~400 degrees Fahrenheit.

Hash Browns

  • Dice red potatoes into very small cubes (1/4″ thick or smaller). The smaller they are the faster they will fry.
  • Dice the sweet potatoes into slightly larger cubes. Sweet potatoes cook slightly faster than regular potatoes.
  • Dice yellow and green onions.
  • Melt 1/2″ cube of butter in the microwave, and pour into cast-iron frying pan.
  • Add all hash brown ingredients (including spices) to the pan.
  • Fry on your Saffire over direct heat at 400 degrees Fahrenheit for approximately 12-16 minutes, or until the potatoes are crisped. Stirring once every 6 minutes.

Cheesy Bacon Wrapped Chicken

  • Slice breasts cross-ways into slices (approximately 1/2″ thick).
  • Cut cheddar into long chunks.
  • Place spinach leaf onto cheddar chunk and wrap tightly with chicken. While still holding the chicken in one hand, wrap bacon around the chicken tightly until the chicken is fully covered. Repeat until all slices of chicken are stuffed and covered with bacon.
  • Put butter in the microwave for 10 seconds until melted.
  • Cover the bottom of a cookie sheet with Pam spray, place all bacon covered chicken on the cookie sheet.
  • Add seasonings to the melted butter and drizzle over the bacon wrapped chicken.
  • Wearing grill gloves and using your Saffire Ash Tool, carefully place your heat deflector into your grill.
  • Put the bacon wrapped chicken into your grill and bake at 400 degrees Fahrenheit, until the internal temperature reaches 160 degrees Fahrenheit (approximately 30 minutes). Be sure to turn them every 10 minutes.

Plate the bacon wrapped chicken with the hash browns, and enjoy!
