Cooking In Your Saffire

There is so much versatility with our cooking grids today. We offer multiple levels of cooking, split grids, and multiple grids in use at the same time. Let’s start with the basics first!

Cooking Grid Selection

What do you see when you look at the cooking grid you cook with?

I see two half cooking grids. They can be combined into one cooking grid, or separated and used individually.

I see a single-piece cooking grid. One side has a door on it I can open to access the charcoal from above.

Avoid burns from handling hot ceramic inserts.

The Fire/Pizza Stone and Heat Deflector, being ceramic, may retain heat for a long period of time. Use protective gloves when handling them after use, and do not place on combustible surfaces.

Avoid burns from handling hot metal inserts.

Never touch hot cooking grids or other metal inserts while or shortly after they’re in use in the hot grill.

Multi-Grid Placement Ideas

Smoking

Smoking usually involves using both halves of your Multi-Grids on the same level. Usually, you smoke larger pieces of meat, as they are usually tougher.

Traditional Smoking Setup

Usually when smoking meat, you will be putting both of our Two-Piece Heat Deflectors into your grill, and placing both Multi-Grid halves at the top level. You can put a pan (optionally a throw-away tinfoil pan) on top of the Two-Piece Heat Deflectors to catch any drippings from the meat.

Double-Layer Smoking Setup

A double-layer smoking configuration lets you smoke on two levels at the same time using a Secondary Cooking Grid. One benefit to double-layer smoking is the fat from the top level drips down onto whatever is on the bottom level.

Keep in mind there are height restrictions with this setup. The bottom level will have approximately 5″ of headroom, so put your taller meat on top.

Again, usually some kind of drip tray is used underneath the bottom cooking grid to catch the fat drippings.

Grilling

Traditional Grilling Setup

This is the standard grilling configuration. You light your charcoal bed underneath, and put the cooking grid at the top level. You’ll get good grill lines this way.

Steak Searing On A Ceramic Saffire Bbq

Searing Setup

So you want your steak rare or medium rare? No problem. Set your cooking grids down to the bottom level, and give them a flame-kissed look before pulling them off.

If you own a Multi-Rack, just place your Primary Cooking Grid on the lower level. If you own our triangular Cooking Grid Elevator, you will need to remove it and let the Primary Cooking Grid rest on top of your firebox instead.

Reverse Sear Setup

For a reverse sear setup, put half of your Two-Piece Heat Deflector in. Next put half of your Multi-Grid on the top level and half on the lower level. Now you can indirectly cook two steaks while you sear another at the same time, in the same grill!

Pro Tip: If you find that this method cooks your steaks either too hot on the indirect side or too cool on the searing side, try using the Charcoal Divider that comes with your Charcoal Basket. Put all of your charcoal on the searing side of the basket, and none on the indirect cooking side.

Pizza Oven

Premade Pizza Setup

It’s easy to cook pizza hot and fast with premade crust! Just get your Saffire up to 425 degrees Fahrenheit. Sprinkle corn flower on your pizza stone, add the crust, put the toppings on, and get your pizza in your Saffire. Remove when the cheese is melted, or when your meat is up to temperature.

Hand Made Pizza Crust Setup

Get your Saffire to 500 degrees Fahrenheit and put your heat deflector in on the cooking grid. Use two pizza stones to put the pizza on: one for the pizza that’s on the grill, and one for the pizza you’re making to go in next. Stack the cool or warm pizza stone on top of the heat deflector to prevent the bottom of the crust from burning. Remember to use very thick oven mitts, or better yet a Grid Gripper, to remove that hot stone!

Baking

Traditional Baking Setup

Try baking up to 400 degrees Fahrenheit with heat deflector in and your Primary Cooking Grid on the top level.

Add in the Secondary Cooking Grid to bake on two levels at the same time! (Temperatures will vary between levels.)

Hot Baking Setup

To bake at hotter temperatures (450-550 degrees Fahrenheit) put your heat deflector in and place your Primary Cooking Grid on the bottom level.

If you own a Multi-Rack, just place your Primary Cooking Grid on the lower level. If you own our triangular Cooking Grid Elevator, you will need to remove it and let the Primary Cooking Grid rest on top of your firebox instead.

Add in the Secondary Cooking Grid to bake on two levels at the same time! (Temperatures will vary between levels.)

Two-Zone Baking Setup

You can get two different temperature zones in your grill by using your Charcoal Divider that’s included with your Charcoal Basket. Put all of your charcoal on one half of the Charcoal Basket and use both halves of the Two-Piece Heat Deflector to have a warm and hot side while baking.

If the temperature zones aren’t different enough, drop the Multi-Grid half that’s over the side with charcoal down to the lower level.

Stove Top Cooking

Traditional Stove Top Cooking Setup

You can have a stove top cooking experience (gas stove top) by simply using a cast-iron skillet or pot in your Saffire.
