How Do I Make My Charcoal Basket and Ash Pan Last as Long as Possible?
If you want your Charcoal Basket and Ash Pan to last as long as possible, here are a few tips to follow:
- Ash acts as an insulator and also blocks air-flow. When you allow ash to reach all the way up near the Charcoal Basket, you’re doing two things: 1) restricting air-flow to your charcoal, which makes it take longer to get the grill up to temperature, and 2) putting more heat-stress on the Charcoal Basket. Think about it, when ash builds up right underneath the basket, heat from the charcoal builds up around the basket too, making the basket even hotter. You won’t notice how hot the Charcoal Basket is getting up where the food is, but that stainless steel basket sure will! Keep the basket cool for more years of use: clean out the ash before it gets up near your Charcoal Basket.
- The bane of steel is greasy, salty drippings. You love to smoke in your Saffire, and we do too, but if you get a lot of salty grease dripping off your food every time you smoke, there’s a few things you can do. First, consider using something to catch the drippings, like an aluminum foil drip pan. Second, if you still find a lot of grease down on your ash pan, consider wiping the grease off as often as you think is necessary. It only takes a second, and your Ash Pan will thank you.

How to Start Your Saffire Grill
Here are the steps to start your Saffire grill.
- Clean the ash out of your charcoal from the cook before. Ash will choke the fire and prevent charcoal from burning hot, if at all.
- Clean the ash out of your grill, if there is considerable ash build up at the bottom of your grill (underneath your bed of charcoal).
- Open the top and bottom air vents on your grill before lighting.
- Use a fire starter listed below. Do not use fire starter fuel!
- Leave your Saffire open for 6 minutes after starting so the charcoal can heat up quickly. Don’t leave your grill alone while it’s open, as you could damage your grill and/or start a fire this way!
- Close your grill, but leave the top and bottom air vents fully open until the grill reaches your intended cooking temperature. Note that “fully open” means with the chimney top swiveled open, to allow as much oxygen to flow through your Saffire as possible.
Fire Starter Options
All-Natural Wood-Based Fire Starter
You can use wood-based fire starters to start your charcoal. These come in various forms. We recommend Rutland Fire Starter squares, simply because they are cheap, easy to light, and burn for a long time (ensuring your charcoal actually begins to burn). Here are other options:
- Cedar sticks
- Cedar fiber brambles
- Fire starter logs (make sure they say safe for BBQ)
How to Use Wood-Based Fire Starters
Nestle a fire starter down into your charcoal, surrounding it with ash-free lumps of charcoal. Put a larger piece of charcoal over top of the fire starter. Ensure you leave a gap or two around the fire starter for air to flow through once you light it. Light the fire starter through one of the gaps in the charcoal.
The idea here is that charcoal only burns once it reaches a certain temperature. By trapping the heat inside of the bed of charcoal, you give the fire starter a much better chance of actually starting the charcoal around it. If you don’t bury it, the fire starter won’t heat up the charcoal around it enough to start them.
Electric Charcoal Starter
An electric charcoal starter uses a heating element that gets red hot! Be sure to read the instructions on your electric charcoal starter before using it, but the following is some general information.
How to Use an Electric Charcoal Starter
Insert the heating element into the charcoal bed, ensuring the heating element is fully buried. Plug in the charcoal starter, and let it heat the charcoal for approximately 7 minutes. You should hear the charcoal popping as it heats up. After this time, unplug the starter, and carefully remove it from the grill. Place it somewhere safe to cool down for the next 15 minutes, preferably a cement or stone surface, but keep all children and pets away!

How Does Local Delivery for Online Orders Work?
The Saffire website serves as the online sales portal for Authorized Saffire dealers in the continental United States. If there is a dealer in your area with your order in stock, they will fulfill your online Saffire orders by offering local pickup or delivery. All you have to do is specify local delivery in the notes on your order and we will arrange for your local dealer to deliver your grill to your doorstep.
How Does My Cooking Grid Fit on My Multi-Rack?
Good question! There are two kinds of Multi-Racks, so first we need to determine which one you have.
Standard Multi-Rack
Description
If you have our standard Multi-Rack, two of the posts will have one inward-facing hook to hold onto your cooking grid and two posts will have two inward-facing hooks. See image below.

Placement
Your Multi-Rack sits on top of your firebox, with the rings resting on the firebox and the posts sticking up in the air for your cooking grids to hook onto.
Attaching the Cooking Grids
To use the top level of the Multi-Rack, take one of your Multi-Grid halves and attach the round side to a post with a single hook, making sure both far ends of the half grid attach to both posts with two hooks. Do the same thing with the other half grid. Each half grid should be attached to opposite sides and hooks of each other. See the image below as an example.

If you want to place either half of your Multi-Grid down near the charcoal for a more intense cook, simply slip it past the hooks and let it rest on the bottom level.
SG18/22 Multi-Rack
Description
If you have our SG18/22 Multi-Rack, all four posts will have one inward-facing hook to hold onto your cooking grid. Each hook will be at a 45 degree angle. See image below.

Placement
Your SG18/22 Multi-Rack sits on top of your firebox, with the rings resting on the firebox and the posts sticking up in the air for your cooking grids to hook onto.
Attaching the Cooking Grids
To use the top level of the SG18/22 Multi-Rack, make sure it’s turned so that the hooks point perpendicular from the front of the grill. Take your Primary Cooking Grid (you can’t use a Multi-Grid) and attach the cross bars that run along the entire length of the cooking grid to the posts. Again, be sure the Multi-Rack is turned so that when the bars on the top of the cooking grid are running parallel to the front of your grill, the hooks on the Multi-Rack are perpendicular to the bars and will hook onto the bars.
If you want to place your Primary Cooking Grid down near the charcoal for a more intense cook, simply turn it 90 degrees so the bars slip past the hooks and let it rest on the bottom level.

The Big Green Egg firebox comes pre-assembled as two units (firebox and fire ring).
How Hot is Too Hot for My Saffire?
The temperature gauge at the top of your grill should tell you how hot your grill is. There shouldn’t be any need to let the grill get hotter than 700° F. For the safety of your grill and internal components, we recommend cooking at or below the 750° F level. Never let your grill exceed 900° F. This is for your own safety, as well as for the safety of your grill.
