The Chicken Roasting Rack allows you to cook your chicken vertically, allowing heat to enter the chicken and cook the inside as well as the outside. Cook over one of our Ceramic Heat Deflectors until the breast is approximately 165 degrees Fahrenheit for an excellently crisped and tender bird. To brown the inside as well, cut an air-vent in the top of the bird to allow air to pass through it while cooking.
